Sunchokes Soup
You are probably wondering by now as to why we are only having soup this week, after all, I did mention last week that we were having company. Yes, Lenny’s cousin David, is here from Montreal; but, the boys have been in Vegas all week ……. not having fun, I am sure, but rather working. Now, I am bummed not only because it means I have not seen my other half for almost a week, but, I like having company stay with us. It gives me a great excuse to show off my cooking talents and to make some things I normally don’t make for two of us. Unfortunately, I am not sure how much cooking we are going to get in for David’s holiday with us. They get back late Friday night and then we have a huge job until the following Thursday at which time David is going to have to fly back to Montreal. So, that is why we or I have been dining on soup all week.
I normally don’t post about leftovers, because we don’t have them around and we really don’t like them. But, I wanted to post tonight and Ijust had to tell you that the soup was even better the second day. The flavor of the sunchokes was really more intense tonight, a deeper earthy taste and it actually had a hint of artichoke hearts. I really enjoyed it even more the second time around.


There are so many soups and stews that simply taste better the next day. I am glad you had the extra and gave it another shot in order to discover how the flavors intensify. Maybe this is one soup it would be best to make a day ahead of time and then reheat.
And hey – congrats on the T’giving Sides Recipe Challenge win! I hope your guests at the table that day are appropriately impressed with their award winning dish.. : )
I just love soup, all day long! Now that it’s getting colder, I can eat tons of it !
I’m really interested in the sun chokes, have seen them alot, but never tried. But will do for sure!
