Another simple dinner

We have not participated in a “Weekend Herb Blogging” for some time. Now that our herb garden is taking off, I thought it would be a good time to do so. Our hostess this week is the founder of the ever so popular event, Kalyn of Kalyn’s Kitchen.

I used two herbs from our garden for this very easy dish; oregano and some dried red chili peppers. I love the way fresh herbs smell when you just slightly crush them between your finger tips, instantly reminds me of summer. I knew this dish would end up being refreshing.

We have been working all weekend and were pretty beat when we got home, as well I am trying to use up whatever we have in the house, since we will be traveling next week. This did not leave us with much besides the herbs, we had some summer squash, berries, eggplant, asparagus and pasta.

This is what we came up with, Summer Squash with Oregano and Chilies. The recipe is so simple, boil water, cook pasta, grate your summer squash, cook some garlic with olive oil, warm the squash in the oil, add herbs and eat. It is incredibly fresh tasting, slightly sweet (thanks to the oregano and squash) and a little spicy. A very nice summer time dinner in a hurry……
