Soups and Salad: Recession Dinner Series #9

Last night we started the kick-off another week of recession/depression proof dinners.  Tonight we had lovely leftovers with a few new additions to round out the meal.   Who says leftovers have to be boring *yawn*.

chocolate-stout-0209It was very cold out when we got home tonight and I wanted to warm the house up.  So we turned on some blues (if you know us well, this is odd, Lenny said he aged himself tonight), opened a bottle of Double Chocolate Stout and proceeded to make my famous Mile High Biscuits while the soup simmered and warmed the house.

We tossed together a handful of sweet butter lettuce salad with avocado and then  lightly drizzled olive oil and a fresh squeezed Meyer Lemon over the top with a finishing of sea salt and cracked black pepper.

leftover-acorn-squash-soup-with-lentil-0209This soup is the soup that keeps giving.  Not only did we have dinner last night, lunch today and dinner tonight;  but, tomorrow there is lunch again!  The soup was even more flavorful then before.
