By the time, Steamy reads this it will be her birthday and our last entry into her very fun challenge. Had a great time coming up with Asian inspired quick dinners!  Happy Happy Joy Joy to you!

Veggie Curry, Thai Yellow Curry, Steamy\'s Kitchen, Jaden Hair

Hot as Steamy .. Thai Veggie Curry

Cook chopped onion. Add diced eggplant, yellow potato and red pepper. Cook for a couple minutes. Add coconut milk and couple teaspoons of yellow curry. Cook for about 10 minutes. Eat over rice!

Thinly slice cucumber. Drizzle with sesame oil, rice vinegar, sea salt and sesame seeds. Serve .
