TWD: Chipster Brownie

Double the fun with a deep dark chocolate brownie topped with a chocolate chip cookie.  This will be a huge hit with all the cookie monsters in your life!

Beth of Supplicioius was the hostess with the mostess for the Tuesdays With Dorie (TWD) challenge this week and she picked Chipster Topped Brownies.  I knew this would be the perfect dessert to make during our weekend get away with our friends, Andy and Jeff, to their wonderful home in Palm Springs, so I saved it!  Andy and I made a great make your own pizza dinner and this was the perfect dessert to wrap up the evening, after all, what is there not to love about a brownie with a chocolate chip cookie on the top!

The base of this bar cookie is a deep dark chocolate brownie with walnuts, I opted to use one of my favorites, Scharffenberger Bittersweet Chocolate for this portion.  The chocolate chip cookie recipe was a  traditional chocolate chip cookie.  I didn’t have enough white sugar so I used all brown sugar which gave the dough a nice caramel color as well I used bittersweet chocolate chips and I used 12 ounces instead of 6 – one cannot go wrong with too much chocolate!

The cookie is perfect served alone or with vanilla bean ice cream.  This recipe is perfect for your favorite cookie monster, young or old!

    Hey Denise, I hope you both got back to SF okay without any nasty traffic! I would love a copy of the recipe if you could share it. I kept eating them after you left and meant to take them with me, but Jeff gave them to John.
