It is Tuesday and that could only mean one thing … Dorie time!  When I saw Gretchen over at Canela & Comino picked biscotti, I knew I had to make it!  The last time and the only time, I have ever made biscotti, it was a disaster.  It was so long ago and all that I really remember was that the logs were so tough that I could barely slice through them, so that I could bake them a second time.  I decided then that there are some things that you just need to buy.  Until now!

Dorie’s recipe for biscotti is so easy, that I kept reading through it to make sure I was doing it right.  Basically you cream some butter and sugar, then add your dry ingredients and any extras.  I love that there is cornmeal in the recipe as it gives it a great rough texture. I wanted to make a fall inspired recipe, so I used cranberries, almonds and port (to macerate the cranberries).  As well, I tried to keep it as “local” as I could with the exception of the cornmeal and flour that I had on hand.

I was somewhat concerned as I rolled out the logs as they were not very thick;  but, was pleasantly surprised when I took them out of the oven and they were the size biscotti should be.  After cooling for 30 minutes, I was still able to get a knife through them in order to prepare for the second baking.  After 15 minutes, they were ready to come out of the oven.  End result, nicely golden brown, slightly crunchy, not to sweet and the jammy flavors were very evident in the traces of port you can taste on the cranberries – goes very well with a nice espresso!

Overall verdict, I loved the recipe and plan to use it as my Christmas “foodie” gift.  Anyone want biscotti for Christmas??
