Susan over at Sticky, Gooey, Creamy, Chewy is having a bash to celebrate a great year of blogging!  We had all intentions of coming up with a super gooey cocktail using some blood orange juice we stashed in the freezer;  but, we both came down with a nasty head colds this weekend.  Instead, we decided to un-thaw some of those outstandingly sweet peaches from a couple months ago and make a gooey dessert – Peach, Vanilla Bean, French Thyme Galette (crust made with half flour and half almonds) – so gooooooodddddddd!!!  Not over the top sweet and full of flavor with the vanilla beans and thyme – so much flavor it burst through our colds!  Thanks for inviting us to such a fun bash, Susan!

Before we headed to the bash we did use some cherry tomatoes from the garden and a red pepper in the fridge and made a really nice soup.  Garnished with garlic croutons and spicy pimento!  Easy.  Yummy.  Perfect before a big party!
