Kitchen Sink Soba Noodles

Soba Noodles, Chicken, Edamame, Asian, Food, Cooking, Culinary, Food Photography  Well, everything but the kitchen sink.  As we were out of town last weekend and it has been a very busy week, I have not had a chance to grocery shop, so we are dependent on the few items we have in the house as well it was a Thursday night which meant gym night;  I am always looking for new exciting simple dishes for gym night!

All I had in the house were some Soba Noodles (we love them), a red pepper that had seen better days, a couple cans of chickpeas, some frozen edamame and a couple chick breasts (NO, not mine ;)   ).  I basically quick cooked the breasts with a little salt and pepper and grapeseed oil – the best thing!  Cooked up the noodles with the Edamame, tossed together a little dressing (Asian inspired) and then threw the entire dish together.  Quick (under 20 minutes), simple, light and ever so tasty!
